Yellow Bourbon

A Bourbon with yellow fruit, long grown in Brazil, known for sweet, mellow cups.

Yellow Bourbon is a Bourbon whose cherries ripen yellow instead of red. It's most associated with Brazil, where it's called Bourbon Amarelo, and it also appears in Central America.

Like red Bourbon it's valued for sweetness: caramel, brown sugar and soft fruit, often a little mellower in acidity.
